In my opinion, it's better to be in a jam than in a pickle. Pickles are nasty and sour. And while jam is sticky, at least it is sweet. So for the benefit of my posterity, I decided that today I would teach my children or grandchildren how to
get into a jammake jam, which is my favorite thing to do with strawberries. The only jam we seem to eat is strawberry jam, although I've made peach jam too, but it doesn't seem to get eaten
at allas quickly as the strawberry. All you need for this is a freezer, some containers, strawberries, sugar, pectin (I will only use MCP) corn syrup and a lemon. Let's get started, and remember, this is really to teach my grandkids so forgive the simplified language and/or directions.
Wash the strawberries, then hull them (cut the stem off) and cut them into big chunks. This picture shows the washed strawberries, the cut up berries, and the trash bowl with the stems in it.

I use the food processor to chop the berries into smaller pieces. I just turn it on and off a few times really fast until it looks like this.

Here's my whole batch of chopped strawberries ready to be made into jam.

Now measure out 3 1/4 cups of berries and pour it into a big bowl.

Actually, depending on how many strawberries you're using, you'll need several bowls.

Then you're ready to add the pectin. This is the best kind, and the recipe I'm showing you how to make can be found inside every box of this brand. If you don't use this brand, then it will be a different recipe. For my California granddaughters, you can find it at Stater Brothers. For my Utah grandkids, you can find it at Maceys.

Add the pectin to the berries

and 1/4 cup of lemon juice. You should be able to squeeze that much juice from one lemon.

Now I need two timers because I can't keep track otherwise. I set one for 30 minutes, and the other one for 5 minutes. Stir the strawberries, pectin and lemon juice once every 5 minutes until 30 minutes are up. When 30 minutes are up, add a cup of corn syrup.

Also add
a ton of sugar4 1/2 cups of sugar, or if you want to weigh it, it's 2 1/4 lbs, or 1000 grams.

Then you stir it forever, or until the sugar dissolves. When it's dissolved, pour it into a container that can go in the freezer, but don't put it there yet. Just let it sit on the counter or pantry shelf for 24 hours, then put it in the freezer. Then hire a maid to come and wash all the dishes that you got dirty and sticky making your jam. Or, ask Nana to do it.
Then you have to make pancakes.

And when they're gone, you have to make more.

And when they're gone again,

then you will be full and happy.
