Mix the granola with some vanilla yogurt, and fresh fruit of your choice for a refreshing treat.
We used blueberries and sliced strawberries.
I finished my parfait and then ate another, and then finished off one of the kids'.
I also eat it straight from the container. So good!
Crunchy Granola "Sweet"
2 cups rolled oats (not quick)
1/4 cup butter
1/2 tsp vanilla extract
1/8 tsp almond extract
2 T. honey
1/4 cup brown sugar
1/4 cup sliced almonds
1/4 cup chopped pecans
3/4 cup shredded coconut
1/2 cup Craisins
Melt the butter in a medium skillet over medium heat. Stir in the honey, brown sugar and the extracts. Add the oats, nuts and coconut, stirring until everything is coated with the sugar mixture.
Continue cooking, stirring frequently until the granola is a dark golden brown which will take about 15 minutes. Remove from heat and stir in the Craisins. Pour onto a sheet of parchment and allow to cool completely. Break up chunks and store in an air-tight container, unless you eat it all before it can even get to the container, which is entirely possible. Recipe doubles easily and can be frozen.
